Molecular Tools to Exploit the Biotechnological Potential of Brettanomyces bruxellensis: A Review

چکیده

The Brettanomyces bruxellensis species plays various roles in both the industrial and food sectors. At biotechnological level, B. is considered to be a promising for biofuel production. Its presence alcoholic beverages can detrimental or beneficial final product; contribute spoilage of wine beer, but also produce good aromas. However, little known about its genetic characteristics and, despite complete sequencing several genomes knowledge metabolic pathways, toolkits efficient easy modification are still underdeveloped. Moreover, different ploidy states high level genotype diversity within this makes development effective manipulation tools challenging. This review summarizes available how they may employed improve quality beer.
